A HEALTHY SNACK
SPICED BUTTER BEANS
200g tin of butter beans (chickpeas and other large cooked beans work well too), drained
1/2 a teaspoon of cumin
1/2 a teaspoon of ground coriander
1/2 a teaspoon of turmeric
A pinch of black pepper
1 teaspoon of lemon juice
1 teaspoon of oil
Set your oven to 200C/395F.
Place the drained beans on some kitchen paper and pat them a dry as possible.
Mix all of the spices together with the oil and lemon juice to form a paste.
Add the drained beans and make sure they are well coated.
Place in a small ovenproof dish (or spread them onto a lightly oiled baking tray) and bake in the oven for 25-30 mins until slightly crisp.
Serve as a snack or side dish!
ALTERNATIVE TWIST - serve with a dollop of natural/Greek yoghurt or stir some freshly chopped coriander through the beans!
